How to Store Your Peekos
Oysters are alive when they reach you, which is why proper storage matters. Luckily, they’re low-maintenance — a little chill and a little air is all they need.
Keep ’em cold
Place your oysters in the coldest part of your fridge.
35–40°F is the sweet spot.
Let ’em breathe
Keep them in a bowl or tray and cover lightly with a damp towel.
No plastic bags. No airtight containers.
Cup-side down
The rounded “cup” of the shell should face downward.
This helps the oyster hold onto all that beautiful brine.
Fresh water?
You can rinse your oysters briefly when you receive them but. . .
Don’t soak or leave them stagnant in fresh water - they are meant to be briny!
Shelf life

1. Wrap + grip
Use a folded kitchen towel or cut-resistant glove.
Hold the oyster cup-side down, hinge pointed toward you.
2. Find the hinge
Look for the small “V” at the back of the shell.
That’s your entry point.
3. Wiggle + pop
Slide in the knife tip, apply steady pressure, and give a gentle twist.
You’ll feel it release.
4. Clean the cut
Run your knife along the top shell to detach the adductor muscle.
Remove the top shell, then slice under the oyster to free it.
5. Check the vibe
The oyster should smell clean, cold, and like the sea.
If it does, it’s ready.
Pro Tip: If one hinge is stubborn, flip the oyster. Nature doesn’t always make things symmetrical.
